For us, vineyard work is very important. Our wine has always been organic, like our Evo Oil. The idea of Francesca and Gerardo is to start out with the utmost salubrity of the product. The grapes arrive at the cellar healthy and are selected manually for non-invasive oenological treatment with the addition of a minimum amount of sulfur, only after fermentation. Pressed and fermented at controlled temperature, the grapes rest for a while on its own lees.
